Makes ~6 ice creams

Ingredients

  • 1 can (400ml) full-fat coconut milk
  • 2 tbsp BlueMAJIK powder
  • 2 tbsp maple syrup (or to taste)
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice (optional – for brightness)
  • Optional: blueberries or mint leaves blended in for a swirl

Instructions

  1. Add all ingredients to a blender and blend until smooth and fully blue.
  2. Pour into ice cream moulds.
  3. Freeze for at least 4–6 hours (or overnight) until solid.
  4. To release, run the mould under warm water for 5–10 seconds.
