BlueMAJIK Coconut Yogurt Popsicles

Cool, creamy, and bursting with colour, these BlueMAJIK Coconut Yogurt Popsicles are the ultimate summer refreshment. With just a handful of simple ingredients, they transform into vibrant, nutrient-packed popsicles powered by BlueMAJIK® powder. Not only are they visually stunning, but they’re also loaded with superfood benefits — making them a fun and wholesome treat for both kids and adults.

Ingredients

  • 680g of coconut yogurt (or almond or any yogurt you prefer will also work)
  • 1 cup of coconut oil (warm until liquid)
  • 3-4 tsp of E3Live's BlueMAJIK®powder
  • 2-4 tablespoons of maple syrup (if keto or sugar-free use 1 teaspoon of raw monk fruit extract
  • 20 organic blueberries (optional)

Instructions

  1. Spoon your yogurt into the blender and start the blender at a slow speed.
  2. Slowly pour the liquid coconut oil into the mix while increasing the speed.
  3. Blend until smooth (using the coconut oil here will act as an emulsifier so the fat and ice don’t separate when it freezes).
  4. Take out half of the batter and add the BlueMAJIK® powder
  5. In your popsicle moulds add in half of your batter (it is up to you if you want the white or blue first).
  6. Halfway through before you put the second colour add in 3-5 blueberries.
  7. Add your second colour until the moulds are full.
  8. Cover and freeze overnight.
  9. Take out the next day and enjoy!
