Coconut Yoghurt Pops

Cool, creamy, and naturally vibrant, these Coconut Yoghurt Pops are a delightful superfood twist on frozen treats. Blending coconut yoghurt with nuts, lemon myrtle, and a touch of natural sweetness, then finished with BlueMAJIK® powder, they create a nourishing pop that’s as beautiful as it is refreshing. Perfect for a healthy dessert or summertime snack.

Ingredients

  • 1 ½ cups coconut yoghurt
  • ½ cup soaked macadamia or cashew nuts (or other nuts of your choice)
  • ¼ cup coconut water to blend, if needed

Flavouring

  • 2-4 drops lemon myrtle essential oil
  • 1 tbsp fermented brown rice syrup
  • 5-10 drops Stevia
  • ½ tsp vanilla
  • Pinch sea salt
  • 1 tsp BlueMAJIK® powder

Instructions

  1. Blend ingredients together until smooth and creamy (adding coconut water if needed to assist with blending).
  2. Pour into silicon popsicle moulds and freeze until set.
