Fruity Rainbow Parfait

Colourful, refreshing, and packed with superfoods, this Fruity Rainbow Parfait is as beautiful as it is nourishing. Layers of coconut yogurt infused with bright natural powders like BlueMAJIK®, pitaya, matcha, and turmeric create a stunning spectrum of colours, while fresh berries and kiwi add juicy sweetness. A fun, wholesome treat that’s perfect for breakfast, dessert, or anytime you want to eat the rainbow.

Ingredients

  • 2 drops of organic lemon extract
  • 1 cup unsweetened coconut yogurt 
  • 1 tsp Pink Pitaya powder
  • 1 tsp BlueMAJIK® powder
  • 1 tsp butterfly pea flower powder
  • 1 tsp matcha powder
  • ¼ tsp organic peppermint extract
  • 1 tsp maple syrup
  • ½ kiwi
  • ½ tsp pomegranate powder
  • ½ tsp beetroot powder
  • 1 tsp turmeric powder
  • ¼ cup fresh strawberries
  • ¼ cup fresh blackberries
  • ½ cup fresh blueberries
  • ½ cup fresh raspberries

Instructions

  1. Grab 7 different bowls for the different yoghurts.
  2. In one bowl, add ¼ cup of yoghurt and pink pitaya powder.
  3. Then add it into the blender with the ½ cup fresh raspberries and place it back in the bowl.
  4. In a second bowl, add ¼ cup yogurt, lemon extract and BlueMAJIK®
  5. Then add the blackberries after they’ve been blended.
  6. In a third bowl, add ¼ cup yogurt and butterfly pea flower powder and mix well.
  7. Then add this mixture into the blender with ½ cup blueberries.
  8. In the fourth bowl, add matcha, yogurt and mint extract. Blend the kiwi and add to the mixture.
  9. In the fifth bowl, add pineapple, turmeric and yogurt after blending.
  10. In the sixth bowl, after blending, add yogurt, strawberries, beet and pomegranate powder.
  11. In the seventh bowl, add the plain yogurt.
  12. Grab a parfait glass or jar and add a layer of blackberry purple, then blue lemon, then green matcha, then yellow turmeric pineapple, then red strawberry pomegranate then pink pitaya, then white.
  13. Add a second layer and top with your favourite fruit and enjoy!
