Bright, creamy, and breakfast-ready—this BlueMAJIK® chia pudding layers a silky ocean-blue base with a vanilla yoghurt cloud, then tops it off with juicy blueberries, sweet apricot, and a little crunch. Prep it ahead for an easy grab-and-go breakfast, or serve it in a glass for a “sunrise” snack that feels a bit special.

Ingredients

For the Blue Layer:

  • 3 tablespoons chia seeds
  • 1 cup almond milk (or milk of choice)
  • 1/2 teaspoon BlueMAJIK® Powder 💙
  • 1 teaspoon maple syrup or honey (optional)

For the White Layer:

  • 1/2 cup Greek yogurt (or coconut yogurt for a vegan option)
  • 1 teaspoon vanilla extract
  • 1 teaspoon honey or sweetener of choice

Toppings:

  • Fresh blueberries
  • Diced apricots
  • Pine nuts (or nuts/seeds of your choice)

Instructions

Prepare the Blue Layer:

  • In a bowl, whisk together almond milk, BlueMAJIK® powder, and maple syrup (if using).
  • Add chia seeds and mix well. Let sit for 5-10 minutes, then stir again to prevent clumping.
  • Cover and refrigerate for at least 2 hours or overnight, until thickened.

Prepare the White Layer:

  • Mix the Greek yogurt with vanilla extract and honey in a separate bowl. Adjust sweetness as desired.

Assemble the Pudding:

  • In a glass or jar, layer the BlueMAJIK® chia pudding at the bottom.
  • Add the yogurt layer on top.
  • Garnish with fresh blueberries, diced apricots, and a sprinkle of pine nuts.
  • Serve immediately and enjoy the vibrant, nutrient-packed treat!
